2-4 cloves garlic (depending on size and flavor)
1 cup basil leaves
2 eggs plus 1 egg yolk
2 Tbl. lemon juice
1/4 tsp salt
1 cup extra virgin olive oil
1 cup peanut oil ( or sub canola or safflower oil )
In bowl of food processor fitted with a steel blade, mince the garlic cloves. Add the basil leaves and pulse until the leaves are minced fine. Scrape down sides of bowl and add the eggs, lemon juice and salt. Blend well. With motor running, slowly add oils in a steady stream. Process 1 minute more.
Refrigerate.
Makes 2 cups.
Note: Garlic varies in flavor from mild to very strong. Always smell freshly crushed
garlic for intensity and add more or less according to your taste.
